I have never ordered a bean burrito from Taco Bell but Hugo orders them all the time and loves them. Up until about 10:30 last night I had avoided fast food of all types (except for Kroger sushi) for 12 days. I was soooo hungry though so I figured…a bean burrito won’t kill me.

Lets just say there was an incident involving cheese and onions and my face. Raw onions make me sick…like literally. Weird things happen to my body when I eat raw onions. Just not a good food day today. *sigh*

Food Lion has some pretty decent, vegan, organic canned vegetables they’ve recently started carrying and that I have, consequently, started buying and eating. Beans are the ultimate convenience food indulgence for me right now. I was afraid I had been eating too many of them (my dwindling stash of beano for evidence) and thought “Hey. I like beans. I will try to make beans from a bag of dried beans. I shall have my own beans. Mmm.”

Right. I put a couple of cups of dried beans on to soak about this time yesterday (2:40pm EST) and put them on at 1:21. I just got to fucking eat them. I don’t know why my brain didn’t compute that they had to cook for almost 2 hours when I inserted this food product into my lunch plans. They were damn good beans though. Not too salty, not too smooshy, and made with nothing but water, salt, and my swearing. Mmm.

From what I have read, the amount of sodium your body can tolerate is determined by genetics. Gaging the amount of processed foods and crap I have eaten in the past…..25 years I should probably cool it with the salt for a while. I know I am extremely sensitive to MSG. If I eat ramen noodles 2 days in a row, I will get a migraine that makes me want to die. This probably has a lot of factors…my blood pressure being one of them. The migraines, I’ve had since I was a kid…the sensitivity to evil chemicals is something I’ve acquired since I turned 19.

For the last 10 days I have had very little processed food (compared to the weeks and years before it’s almost zero), lots of fresh and frozen vegetables, new grains and proteins have been introduced to my diet. Come to think of it, I probably have a thing or two to cross off of my list of 101 in 1001.

I’m still having nightmares/panic attacks in the middle of my sleep cycles which makes it extremely hard to get back to sleep. The other night I jumped out of bed, got my arm hung in my curtain tie back (huge metal U thing), ripped it off the wall, fell down and then realized where I was. Negative: I have damaged my wall. Positive: I get to learn how to repair drywall.

I am healing faster, it seems. I never bruised easily until I started on birth control and if you look at me too hard now I’ll bruise. Most of the damage has been contained to my lower extremities because the dogs bump into me (a lot) and I run into a lot of shit (really a lot). Those bruises would take 14 forevers to heal and the last few I have gotten have cleared up in a few days. This says to me….better circulation maybe? Trudging up and down 6 flights of stairs every night is probably doing me some good as well.

Anyway, I wanted to go ahead and get Day 10 up because I have been so tired in the evenings (i somehow missed day 8). I’d like to get in bed at a decent hour and fall asleep at a decent hour and wake up at an appropriate hour and not feel like I’ve spent 8 hours getting my ass kicked. I’m off to do some housework and think about Actionscript and how much I wish I could wrap my head around it. Au revoir mon ami.

I had to cook my $4 organic eggplant yesterday because it was starting to wither. I decided Eggplant Parmesan. I breaded and fried the eggplant which smelled and tasted delicious. While I was waiting on everything else to finish, my eggplant got mushy and soggy as hell and I was rather disappointed in it. I popped it in the oven, which helped the breading, but over cooked the eggplant.

I believe I will need to do 1 inch slices next time instead of 1/2 inch and that I will need to use my eggplant on the day that I buy it. Other than that, the flavors were good. I also skipped all forms of vegan cheese which would rename this culinary adventure “Fried Eggplant and Tomato Sauce.” I would honestly rather do without it completely than to use nasty fake cheese. The vegan parmesan was….gross.
