After stepping on the scale this morning i have decided to forgo the cupcakes this weekend. i now have all the ingredients for the plain jane vanilla cupcakes for next weekend or whenever the mood strikes me.
i’ve also decided i am going back on the fat burners. we went to sams and bought plenty of veg’n snacks. dried fruits, nuts, etc. i picked up a hello kitty lunch bag that was on special. i picked it because it was the only one there that had a “certified lead safe” tag. score. later tonight i’m going to pack baggies/containers of various things and make sure i keep it stocked and in my car so whenever i find myself stranded in the land of burgers, i will always have something to eat.
speaking of burgers, the burger king veggie burger (by morningstar farms) is very very good.
i blame the expansion of my muffin top on the excess of dairy i’ve been eating lately. i can have several very good vegan days and then i can have a handful of very bad-not even close-vegan days. last night’s dinner was vegan AND delicious. earth balance spread is my new favorite right now.
Last night’s menu:
Steamed Kale Italiano
(this was half recipe and half improvisation)
- Large colander full of de-stemmed kale
- 1 can of diced tomatoes (garlic & herb variety)
- 1 cup veggie broth
- olive oil
- two or three shakes of sundried tomato and basil seasoning
Combine everything but the kale into a large pot. Bring it up to a simmer and then put the kale in. It looks like a LOT of kale, but it will cook way down. Steam/simmer/whatever until the kale is the tenderness you like.
As an aside, the kale turns the most BEAUTIFUL color of green about half way through. I opened the lid to check on it and was overwhelmed by the gorgeous green.
Lentils
This makes a ton of lentils, but that is ok with me. If cooking for one or for no leftovers, use way less. I haven’t been able to make this work as a soup. It is probably because I don’t measure the water and put in however much lentils that I feel like.
- 2 cups of Bob’s Red Mill 13 bean soup mix
- a pot full of water
- 1 vegetarian bullion cube
- 2 tbsp earth balance
Bring the bullion cube and the water to a boil, add lentils. Simmer for 30 minutes. If the beans, et al aren’t as soft as you like, simmer 15 minutes more.
You might think this sounds bland, but I like my food to taste like what it is, not 4 tablespoons of salt.
This was served with some brown & long grain rice and was very delicious. The kale turned out way better than I could have imagined.
Today has pretty much sucked. I started this entry at …. 10 and now it’s 6:47. We just got back home after getting EXACTLY nothing done that I needed to do today. All I want to do at this point is take another fat burner, drink a gallon of water, snack on some homemade popcorn and read myself to sleep.
